Instructions

  1. 1

Preheat oven to 160°C (325°F). Combine the walnuts, cinnamon, cardamom, and 2 tbsp sugar in a bowl.

  2. 2

Brush a 23 x 33 cm (9 x 13 inch) baking dish with melted butter. Layer 8 sheets of phyllo in the dish, brushing each one generously with butter.

  3. 3

Spread one-third of the walnut mixture evenly over the phyllo. Layer 4 more buttered phyllo sheets on top. Repeat twice more — walnut layer, then 4 buttered phyllo sheets — finishing with a top layer of 8 buttered phyllo sheets.

  4. 4

Using a sharp knife, cut the baklava into diamond or square shapes, cutting all the way through to the base.

  5. 5

Bake for 50–60 minutes until deeply golden and crispy throughout.

  6. 6

While the baklava bakes, make the syrup: combine the honey, sugar, water, and lemon juice in a saucepan. Bring to a boil, stirring, then simmer for 10 minutes. Remove from heat and stir in the rose water. As soon as the baklava comes out of the oven, pour the hot syrup evenly over it. Cool completely — at least 4 hours — before serving.
