Instructions

  1. 1

If using a mortar and pestle (traditional method): pound the garlic and chillies to a rough paste. Add the palm sugar and pound briefly. Add the long beans and pound lightly to bruise them.

  2. 2

Add the shredded papaya in batches, pounding and tossing to bruise the strands and help them absorb the dressing.

  3. 3

Add the fish sauce and lime juice. Toss and pound to combine. Taste — it should be a balance of sour, salty, sweet, and spicy.

  4. 4

If using a bowl (easier method): whisk together the fish sauce, lime juice, and palm sugar until the sugar dissolves. Pound the garlic and chillies separately, then add to the dressing.

  5. 5

Toss the shredded papaya, long beans, and cherry tomatoes with the dressing. Let sit for 5 minutes.

  6. 6

Transfer to a serving plate. Top with crushed peanuts, dried shrimp (if using), and fresh cilantro. Serve with lime wedges.
