Salmon fillets marinated in a sweet-savoury miso glaze, then broiled until deeply caramelised — a Japanese restaurant classic that takes just minutes to prepare.

Ingredients

  • 4 salmon fillets (about 180 g / 6 oz each), skin on
  • 3 tbsp white (shiro) miso paste
  • 2 tbsp mirin
  • 1 tbsp sake or dry sherry
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp sesame oil
  • Steamed rice, bok choy, and sesame seeds, to serve

Instructions

  1. 1

Whisk together the miso, mirin, sake, soy sauce, sugar, and sesame oil until smooth.

  2. 2

Pat the salmon fillets dry. Place in a shallow dish and coat all over with the miso marinade. Cover and refrigerate for at least 30 minutes (up to 24 hours — longer gives a deeper flavour).

  3. 3

Preheat your grill (broiler) to high. Line a baking tray with foil and lightly oil it.

  4. 4

Wipe off any excess marinade from the salmon (it burns easily). Place skin-side down on the prepared tray.

  5. 5

Grill for 6–8 minutes until the glaze is deeply caramelised and the salmon is just cooked through — it should still be slightly translucent in the very centre.

  6. 6

Serve over steamed rice with bok choy. Scatter with sesame seeds and serve immediately.
