Apple Tarte Tatin

The great accidental dessert of French cuisine — apples caramelised in butter and sugar in the pan, then covered with pastry and baked, inverted at the table to reveal a glossy, amber-lacquered masterpiece.

1 hr8 servings

Ingredients

  • 1.2 kg firm apples (Cox, Braeburn, or Granny Smith), peeled, cored, and halved
  • 150 g caster sugar
  • 80 g unsalted butter, cut into cubes
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • 1 sheet ready-rolled all-butter puff pastry (about 320 g)
  • To serve: crème fraîche, vanilla ice cream, or double cream

Instructions

  1. 1

Preheat the oven to 190°C (375°F). Use a 24 cm oven-safe frying pan or tarte tatin dish.

  2. 2

Make the caramel: scatter the sugar evenly over the base of the pan. Cook over medium heat without stirring until the sugar melts and turns a deep amber caramel — about 8–10 minutes. Watch carefully; it goes from perfect to burnt quickly.

  3. 3

Remove from heat. Add the butter cubes and swirl to combine — it will bubble vigorously. Add the vanilla and cinnamon.

  4. 4

Arrange the apple halves tightly in the caramel, cut-side up, in concentric circles. Pack them in firmly — they will shrink as they cook. Return to medium heat and cook for 10–12 minutes until the apples begin to soften and the caramel bubbles up around them.

  5. 5

Remove from heat. Cut the puff pastry into a circle slightly larger than the pan. Lay it over the apples and tuck the edges down around them, inside the pan.

  6. 6

Bake for 25–30 minutes until the pastry is deeply golden and puffed. Cool in the pan for 10 minutes — no longer, or the caramel will set and the tart will stick.

  7. 7

Place a large plate or board over the pan. In one confident motion, invert the tart. Lift the pan away. If any apples have shifted, rearrange them with a spoon. The tart should be a glossy, amber-lacquered beauty. Serve warm with crème fraîche or vanilla ice cream.
