Ribollita (Tuscan Bread Soup)

The great peasant soup of Tuscany — a thick, hearty stew of cavolo nero, cannellini beans, and day-old bread that becomes more magnificent the longer it sits and the more times it is reheated.

1 hr 15 min6 servings

Ingredients

  • 400 g canned cannellini beans, drained (or 200 g dried, soaked and cooked)
  • 200 g cavolo nero (Tuscan kale), stems removed, leaves roughly torn
  • 200 g savoy cabbage, roughly shredded
  • 2 large carrots, diced
  • 3 stalks celery, diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 400 g canned whole tomatoes, crushed
  • 1.5 L vegetable or chicken stock
  • 200 g stale sourdough or ciabatta, torn into chunks
  • 1 sprig fresh rosemary, 4 sprigs fresh thyme
  • 4 tbsp extra-virgin olive oil, plus extra to serve
  • Salt, black pepper, and dried chilli flakes
  • Parmigiano-Reggiano rind (optional but transformative)

Instructions

  1. 1

Heat the olive oil in a large, heavy pot over medium heat. Cook the onion, carrot, and celery for 10 minutes until soft and golden. Add the garlic and chilli flakes and cook for 1 minute.

  2. 2

Add the tomatoes and cook for 5 minutes, breaking them up. Add the stock, rosemary, thyme, and Parmesan rind if using. Bring to a simmer.

  3. 3

Mash half the cannellini beans roughly with a fork and add both the mashed and whole beans to the pot. This gives the soup its characteristic thick, creamy body.

  4. 4

Add the cavolo nero and cabbage. Simmer for 20 minutes until the greens are completely tender and the soup has thickened.

  5. 5

Add the torn bread and stir it into the soup. Simmer for a further 15 minutes, stirring occasionally, until the bread has completely dissolved into the soup and the texture is thick and porridge-like.

  6. 6

Remove the herb sprigs and Parmesan rind. Taste and season generously — ribollita needs bold seasoning. The soup should be very thick; add a splash of stock if needed.

  7. 7

Serve in deep bowls with a very generous drizzle of your best extra-virgin olive oil and cracked black pepper. Ribollita is even better the next day — reheat gently, adding a little water if needed.
