A deeply savoury, wine-braised mushroom stew that rivals the classic beef version — rich, glossy, and utterly satisfying.

Mushroom Bourguignon

Instructions

  1. 1

Heat 1 tbsp butter and the olive oil in a large Dutch oven over high heat. Add the mushrooms in a single layer (work in batches) and cook without stirring for 3–4 minutes until deeply browned. Remove and set aside.

  2. 2

Reduce heat to medium. Add the remaining butter, pearl onions, and carrots. Cook for 5 minutes until lightly coloured.

  3. 3

Add the garlic and tomato paste. Stir for 1 minute. Sprinkle over the flour and stir to coat.

  4. 4

Pour in the red wine, scraping up any browned bits from the bottom. Add the stock, thyme, and bay leaf. Return the mushrooms to the pot.

  5. 5

Bring to a boil, then reduce heat to low. Simmer uncovered for 30–35 minutes until the sauce is glossy and reduced by about a third.

  6. 6

Remove the thyme sprigs and bay leaf. Season generously with salt and pepper. Serve over creamy mashed potatoes, garnished with fresh parsley.
