Spaghetti alle Vongole

Briny clams steamed open in white wine and garlic, tossed with spaghetti and a shower of fresh parsley — Italian coastal cooking at its finest.

25 min2 servings

Ingredients

  • 1 kg (2.2 lbs) fresh clams (vongole), scrubbed
  • 200 g (7 oz) spaghetti
  • 4 cloves garlic, thinly sliced
  • 1 small red chilli, thinly sliced (or ¼ tsp chilli flakes)
  • 150 ml (⅔ cup) dry white wine
  • 4 tbsp extra virgin olive oil, plus more to finish
  • Large handful fresh flat-leaf parsley, roughly chopped
  • Salt and black pepper

Instructions

  1. 1

Soak the clams in cold salted water for 20 minutes to purge any sand. Drain and discard any that are open and do not close when tapped.

  2. 2

Cook the spaghetti in well-salted boiling water until 2 minutes short of al dente. Reserve a large cup of pasta water before draining.

  3. 3

Meanwhile, heat the olive oil in a large, wide pan over medium heat. Add the garlic and chilli and cook for 1–2 minutes until the garlic is just golden — do not let it burn.

  4. 4

Add the clams and white wine. Cover the pan and cook over high heat for 3–4 minutes, shaking the pan occasionally, until all the clams have opened. Discard any that remain closed.

  5. 5

Add the drained spaghetti to the pan with a splash of pasta water. Toss vigorously over medium heat for 1–2 minutes until the pasta is al dente and the sauce coats every strand.

  6. 6

Remove from heat. Scatter over the parsley and drizzle with extra olive oil. Season with black pepper and serve immediately in warm bowls.
