Instructions

  1. 1

Preheat your oven to 160°C (325°F). Pat the chicken completely dry with paper towels — this is the single most important step for crispy skin.

  2. 2

Mash the softened butter with half the garlic cloves, the leaves from 2 rosemary sprigs, and the thyme leaves. Season generously with salt and pepper.

  3. 3

Gently loosen the skin over the breast and thighs with your fingers. Push the herb butter underneath the skin, spreading it evenly over the meat.

  4. 4

Rub the outside of the chicken with olive oil and season all over with salt and pepper. Stuff the cavity with the lemon halves, remaining garlic, and herb sprigs.

  5. 5

Place the chicken breast-side up in a roasting pan. Pour the stock into the bottom of the pan. Roast for 1 hour 30 minutes, basting every 30 minutes.

  6. 6

Increase the oven to 220°C (425°F) for the final 15 minutes to crisp and deeply colour the skin.

  7. 7

Rest the chicken uncovered for 15 minutes before carving. Spoon the pan juices over each serving.
