Lobster Thermidor

The most theatrical dish in the French canon — lobster halves filled with a rich Cognac and cream sauce, topped with Gruyère, and grilled until golden and bubbling in the shell.

  • 2 live lobsters (about 600 g each), or 2 cooked lobsters

Instructions

  1. 1

If using live lobsters, dispatch humanely and split lengthways with a sharp, heavy knife. Remove the stomach sac and intestinal tract. Crack the claws. Brush the flesh with melted butter and season.

  2. 2

Grill (broil) the lobster halves flesh-side up under a high grill for 8–10 minutes until just cooked through — the flesh should be opaque and just pulling away from the shell. Do not overcook. Remove the meat from the shells and roughly chop. Reserve the shells.

  3. 3

Make the sauce: melt the butter in a saucepan over medium heat. Cook the shallots for 3 minutes until soft. Add the Cognac and carefully flambé, or let it bubble and reduce for 1 minute.

  4. 4

Add the white wine and reduce by half. Pour in the cream and simmer for 5–6 minutes until the sauce coats the back of a spoon. Stir in the mustard and tarragon. Season generously.

  5. 5

Fold the chopped lobster meat into the sauce. Spoon the mixture back into the reserved shells, mounding it generously.

  6. 6

Mix the Gruyère and Parmigiano together and scatter over the filled shells.

  7. 7

Grill under a high heat for 3–4 minutes until the cheese is golden and bubbling. Serve immediately on warmed plates with lemon wedges, fresh tarragon, and crusty bread to mop up every drop of sauce.
