Dark Chocolate Ganache Tart

Instructions

  1. 1

Make the cocoa pastry: pulse flour, cocoa, icing sugar, and butter in a food processor until sandy. Add the egg yolk and ice water, pulsing until the dough just comes together. Wrap and refrigerate for 30 minutes.

  2. 2

Preheat oven to 180°C (350°F). Roll out the pastry and line a 23 cm (9 inch) tart tin. Prick the base, line with parchment and baking weights, and blind bake for 15 minutes. Remove weights and bake for 8 minutes more until dry. Cool completely.

  3. 3

Make the ganache: bring the cream and golden syrup to a bare simmer in a small saucepan. Pour over the chopped chocolate in a bowl. Let sit for 2 minutes, then stir from the centre outward until completely smooth.

  4. 4

Add the room-temperature butter and stir until glossy and emulsified.

  5. 5

Pour the ganache into the cooled tart shell. Tap gently to level. Refrigerate for at least 2 hours until set.

  6. 6

Remove from the fridge 20 minutes before serving. Scatter with flaky sea salt just before slicing. Serve with a small spoonful of crème fraîche.
