Instructions

  1. 1

Melt the butter with the olive oil in a large, heavy pot over medium heat. Add the onions and sugar. Cook, stirring every 5–10 minutes, for 50–60 minutes until deeply golden brown and jammy. This long caramelisation is the soul of the soup — do not rush it.

  2. 2

Add the garlic and flour. Stir for 2 minutes.

  3. 3

Pour in the wine and let it bubble for 3 minutes, scraping up any browned bits.

  4. 4

Add the stock, thyme, and bay leaf. Bring to a simmer and cook for 20 minutes. Remove the thyme and bay leaf. Season generously with salt and pepper.

  5. 5

Preheat your grill (broiler) to high. Ladle the soup into oven-safe bowls. Float 2 toasted baguette slices on top of each bowl.

  6. 6

Pile the grated Gruyère generously over the croûtons, covering the surface completely. Place under the grill for 3–5 minutes until the cheese is bubbling, golden, and starting to char at the edges. Serve immediately.
