Red Wine Braised Short Ribs

Instructions

  1. 1

Season the short ribs generously on all sides with salt and pepper. Heat the oil in a large Dutch oven over high heat. Sear the ribs for 3–4 minutes per side until deeply browned on all surfaces. Work in batches — don't crowd the pan. Remove and set aside.

  2. 2

Reduce heat to medium. Add the onion, carrot, and celery to the same pot and cook for 8 minutes until softened and golden. Add the garlic and tomato paste and cook for 2 minutes more.

  3. 3

Pour in the red wine and scrape up all the browned bits from the base of the pot. Bring to a boil and reduce by one third — about 10 minutes.

  4. 4

Add the stock and herbs. Return the short ribs to the pot — they should be mostly submerged. Bring to a simmer.

  5. 5

Cover and braise in a 160°C (325°F) oven for 2.5–3 hours until the meat is completely tender and pulling away from the bone. Turn the ribs halfway through.

  6. 6

Remove the ribs carefully. Strain the braising liquid through a fine sieve, pressing on the solids. Return the liquid to the pot and reduce over high heat until glossy and sauce-like — about 15 minutes. Taste and season.

  7. 7

Serve the short ribs over creamy mashed potato, spooning the reduced sauce generously over the top. Finish with freshly grated horseradish and a few thyme leaves.
