Ingredients

  • 2 kg bone-in pork shoulder (Boston butt)
  • For the dry rub: 2 tbsp smoked paprika, 1 tbsp brown sugar, 1 tbsp ground cumin, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp mustard powder, 1 tsp dried oregano, 1 tsp chilli powder, 2 tsp fine sea salt, 1 tsp cracked black pepper

  • 200 ml chicken or pork stock
  • To serve: brioche buns, coleslaw, pickles, hot sauce, extra barbecue sauce

Instructions

  1. 1

Combine all dry rub ingredients. Score the pork shoulder all over with a sharp knife, cutting 2 cm deep. Rub the spice mixture into every surface and into the score marks. For best results, cover and refrigerate overnight.

  2. 2

Preheat the oven to 150°C (300°F). Place the pork in a deep roasting tin. Pour the cider vinegar and stock around (not over) the pork.

  3. 3

Cover tightly with two layers of foil, sealing the edges well. Roast for 6 hours — the low, slow heat breaks down the collagen into gelatin, which bastes the meat from within.

  4. 4

Remove the foil and increase the oven to 200°C (400°F). Roast for a further 45–60 minutes until the outside is deeply caramelised and the meat is pulling away from the bone.

  5. 5

Transfer the pork to a large board and rest for 20 minutes. Reserve all the pan juices.

  6. 6

Pull the pork apart using two forks, discarding any large pieces of fat or bone. The meat should shred effortlessly.

  7. 7

Pour the reserved pan juices over the pulled pork and toss to coat — this is the most important step for flavour and moisture. Pile onto toasted brioche buns with coleslaw, pickles, and hot sauce.
