Instructions

  1. 1

Preheat oven to 220°C (425°F). Place the whole peppers and unpeeled garlic cloves on a baking tray. Roast for 35–40 minutes, turning once, until the peppers are charred and collapsed.

  2. 2

Transfer the peppers to a bowl, cover tightly with cling film, and leave for 15 minutes — the steam loosens the skins. Peel, deseed, and roughly chop the peppers. Squeeze the garlic from its skins.

  3. 3

Heat the olive oil in a large pot over medium heat. Cook the onion for 8 minutes until softened. Add the smoked paprika and chilli flakes and stir for 1 minute.

  4. 4

Add the roasted peppers, garlic, crushed tomatoes, stock, and sugar. Bring to a simmer and cook for 15 minutes.

  5. 5

Use an immersion blender to blend until completely smooth. Season generously with salt and pepper. If the soup is too thick, add a little more stock.

  6. 6

Ladle into bowls. Swirl in a little cream, add a few fresh basil leaves, and serve with crusty bread.
