Instructions

  1. 1

Heat 1 tbsp olive oil in a large, heavy pot over medium-high heat. Add the sausage meat and cook, breaking it up into rough chunks, for 6–8 minutes until deeply browned and caramelised. Remove and set aside.

  2. 2

Reduce heat to medium. Add the remaining olive oil, onion, and a pinch of salt. Cook for 8 minutes until soft and golden. Add the garlic, rosemary, and chilli flakes and cook for 1 minute.

  3. 3

Add the tomatoes and cook for 5 minutes, breaking them up, until the sauce is thick and fragrant.

  4. 4

Mash about a quarter of the beans roughly with a fork — this thickens the stew beautifully. Add all the beans (mashed and whole) to the pot along with the stock.

  5. 5

Return the sausage to the pot. Bring to a simmer and cook for 15 minutes until the broth has thickened and the flavours have melded.

  6. 6

Add the cavolo nero and stir it into the stew. Cook for a further 5–8 minutes until the greens are completely tender.

  7. 7

Remove the rosemary sprigs. Taste and season generously. Ladle into deep bowls, finish with a very generous drizzle of extra-virgin olive oil and cracked black pepper, and serve with crusty bread and grated Parmigiano alongside.
