Classic French Crêpes

Paper-thin, lacy crêpes with golden edges and a tender, buttery crumb — the batter rested overnight for the smoothest result, served simply with lemon and sugar or filled with whatever you desire.

Instructions

  1. 1

Make the batter: whisk the flour, eggs, and half the milk together until completely smooth — no lumps. Add the remaining milk, melted butter, sugar, vanilla, and salt. Whisk until silky.

  2. 2

Rest the batter for at least 30 minutes at room temperature, or refrigerate overnight. Resting allows the gluten to relax, resulting in more tender, less rubbery crêpes.

  3. 3

Heat a 20–22 cm non-stick pan or crêpe pan over medium-high heat. Add a small knob of butter and swirl to coat. The butter should foam and then subside — this is the right temperature.

  4. 4

Pour in about 60 ml of batter and immediately tilt and swirl the pan in a circular motion to spread the batter into a thin, even circle. Work quickly — the batter sets fast.

  5. 5

Cook for 60–90 seconds until the edges are golden and lacy and the surface looks dry and set. The first crêpe is always a test — adjust the heat and butter as needed.

  6. 6

Flip with a thin spatula (or confidently with your fingers) and cook for 30 seconds on the second side. It will be paler and more freckled than the first side — this is correct.

  7. 7

Stack the crêpes on a warm plate as you go — they won't stick. Serve immediately with lemon and sugar (the classic), or fill and fold into quarters. Leftover crêpes keep refrigerated for 3 days, separated by parchment.
