Instructions

  1. 1

Marinate the lamb: combine the yogurt, garlic, ginger, cumin, coriander, turmeric, garam masala, chilli powder, and 1½ tsp salt. Coat the lamb pieces thoroughly. Marinate for at least 2 hours, or overnight in the fridge.

  2. 2

Fry the onions: heat the oil in a large heavy pot over medium-high heat. Fry the sliced onion for 15–18 minutes, stirring often, until deeply golden and crispy. Remove half and set aside for garnish.

  3. 3

Add the whole spices (cardamom, cloves, cinnamon, bay leaves) to the pot with the remaining onions. Add the marinated lamb and cook over high heat for 8–10 minutes, stirring, until the lamb is browned and the marinade has reduced.

  4. 4

Add 200 ml (¾ cup) water. Cover and cook over low heat for 40 minutes until the lamb is nearly tender.

  5. 5

Meanwhile, parboil the soaked rice in well-salted boiling water with a bay leaf for 5–6 minutes until 70% cooked. Drain well.

  6. 6

Layer the parboiled rice over the lamb in the pot. Drizzle the saffron milk over the rice. Scatter with fresh cilantro and mint. Cover tightly with foil, then the lid. Cook over the lowest possible heat for 25–30 minutes (dum cooking). Rest for 10 minutes before opening. Gently mix and serve topped with fried onions and lemon wedges.
