Instructions

  1. 1

Make the stock: roast the fish bones at 200°C (400°F) for 15 minutes. Transfer to a pot with the onion, fennel, garlic, tomatoes, wine, and water. Simmer for 30 minutes, then strain through a fine sieve. You need about 1.5 L of stock.

  2. 2

In a large, wide pot, heat the olive oil over medium heat. Cook the onion and fennel for 10 minutes until soft. Add the garlic, paprika, thyme, bay leaves, and orange zest and cook for 2 minutes.

  3. 3

Add the canned tomatoes and cook, breaking them up, for 5 minutes. Pour in the fish stock and saffron water. Bring to a boil and simmer for 15 minutes to meld the flavours.

  4. 4

Make the rouille: mix all ingredients together until smooth. Taste and adjust seasoning. Spread generously on the toasted baguette slices.

  5. 5

Add the firm fish chunks to the simmering broth first — they take longest. Cook for 3 minutes.

  6. 6

Add the mussels, clams, and shrimp. Cover and cook for 4–5 minutes until the mussels and clams have opened and the shrimp are pink. Discard any shellfish that haven't opened.

  7. 7

Taste the broth and adjust seasoning. Ladle into deep, warm bowls, making sure each serving gets a variety of seafood. Float the rouille croutons on top and serve immediately.
