Tres Leches Cake

Latin America's most beloved cake — a light sponge soaked overnight in three milks until it becomes impossibly moist and custardy, topped with a cloud of lightly sweetened whipped cream.

Instructions

  1. 1

Preheat the oven to 180°C (350°F). Grease and flour a 23 × 33 cm baking dish. Sift together the flour, baking powder, and salt.

  2. 2

Beat the egg yolks and sugar together for 4–5 minutes until pale, thick, and tripled in volume. Beat in the vanilla and milk.

  3. 3

In a clean bowl, whisk the egg whites to stiff peaks. Fold one third into the yolk mixture to loosen, then fold in the remainder in two additions, keeping as much air as possible.

  4. 4

Fold in the flour mixture until just combined. Pour into the prepared dish and bake for 25–30 minutes until golden and a skewer comes out clean. Cool completely in the dish.

  5. 5

Whisk together the three milks. Poke the cooled sponge all over with a skewer or fork — make many holes so the milk can penetrate every part of the cake.

  6. 6

Pour the three-milk mixture slowly and evenly over the sponge. It will seem like too much liquid — keep going. Cover and refrigerate for at least 4 hours, or overnight. The cake will absorb all the liquid and become extraordinarily moist.

  7. 7

Whip the cream with the icing sugar and vanilla to soft peaks. Spread generously over the soaked cake. Dust with cinnamon and top with fresh berries or mango. Serve cold, cut into squares.
