Baked Eggs with Feta & Herbs

A creamy, herb-flecked baked egg dish — eggs nestled in a garlicky cream and feta sauce, baked until the whites are just set and the yolks are still gloriously runny, served straight from the skillet.

Instructions

  1. 1

Preheat the oven to 200°C (400°F). Heat the olive oil in a large, oven-safe skillet over medium heat. Add the garlic and chilli flakes and cook for 1–2 minutes until the garlic is golden and fragrant.

  2. 2

Pour in the double cream and bring to a gentle simmer. Cook for 2 minutes until slightly reduced.

  3. 3

Scatter two thirds of the feta into the cream. Stir gently — the feta will partially melt and thicken the sauce. Season lightly (the feta is already salty).

  4. 4

Make 6 small wells in the cream mixture with the back of a spoon. Crack an egg into each well.

  5. 5

Scatter the remaining feta over the eggs and cream. Season the egg yolks with a pinch of salt and cracked pepper.

  6. 6

Transfer to the oven and bake for 8–10 minutes until the egg whites are just set but the yolks are still runny. Check at 8 minutes — they continue cooking in the hot pan.

  7. 7

Remove from the oven and immediately scatter with the fresh dill and parsley. Drizzle with a little extra olive oil. Serve straight from the skillet with crusty bread to mop up the cream.
