Duck Confit with Lentils

Duck legs cured overnight in salt and aromatics, then slow-cooked submerged in their own fat until impossibly tender — crisped in a hot pan and served over earthy Puy lentils.

3 hr (+ overnight cure)4 servings

Ingredients

  • 4 duck legs
  • For the cure: 2 tbsp flaky sea salt, 1 tsp black pepper, 4 sprigs fresh thyme, 4 bay leaves, 4 cloves garlic (crushed), 1 tsp juniper berries (crushed)
  • 500 ml duck fat (or enough to submerge the legs)
  • For the lentils: 300 g Puy lentils, 1 onion (finely diced), 2 carrots (finely diced), 2 stalks celery (finely diced), 3 cloves garlic, 200 ml dry red wine, 500 ml chicken stock, 2 tbsp red wine vinegar, 2 tbsp Dijon mustard, fresh flat-leaf parsley
  • 2 tbsp olive oil
  • Salt and black pepper

Instructions

  1. 1

Rub the duck legs all over with the cure mixture. Place in a single layer in a dish, cover, and refrigerate overnight. The salt draws out moisture and seasons the meat deeply.

  2. 2

The next day, rinse the cure off the duck legs and pat completely dry. Preheat the oven to 140°C (275°F).

  3. 3

Melt the duck fat in a deep ovenproof dish. Submerge the duck legs completely in the fat. Cover tightly with foil and cook in the oven for 2.5–3 hours until the meat is completely tender and pulls away from the bone easily.

  4. 4

While the duck cooks, make the lentils: sauté the onion, carrot, and celery in olive oil for 8 minutes. Add the garlic and cook for 1 minute. Add the lentils, red wine, and stock. Simmer for 25–30 minutes until the lentils are tender but holding their shape.

  5. 5

Stir the red wine vinegar and Dijon mustard into the lentils. Season generously and fold in the chopped parsley. Keep warm.

  6. 6

Remove the duck legs from the fat. Heat a heavy pan over high heat — no added oil. Place the duck legs skin-side down and cook for 4–5 minutes until the skin is shatteringly crisp and deep golden.

  7. 7

Spoon the warm lentils onto plates and place a crispy duck leg on top. Drizzle with a little of the duck cooking fat and serve with a simple green salad.
