Pistachio & Walnut Baklava

Shatteringly crisp layers of buttered phyllo filled with fragrant spiced pistachios and walnuts, soaked immediately from the oven in a cold rose water and honey syrup — the temperature contrast is the secret.

Instructions

  1. 1

Make the syrup first so it is completely cold when the baklava comes out of the oven: combine the sugar, water, honey, lemon juice, and cinnamon stick in a saucepan. Bring to a boil, stir to dissolve the sugar, then simmer for 10 minutes. Remove from heat, add the rose water, and cool completely.

  2. 2

Mix the pistachios, walnuts, sugar, cinnamon, and cardamom together. Preheat the oven to 180°C (350°F). Brush a 23 × 33 cm baking dish generously with clarified butter.

  3. 3

Layer 8 sheets of phyllo in the base, brushing each sheet generously with butter. Keep the unused phyllo covered with a damp tea towel to prevent drying.

  4. 4

Spread half the nut mixture evenly over the phyllo. Layer 4 more buttered phyllo sheets on top. Spread the remaining nuts. Finish with the remaining phyllo sheets, buttering each one.

  5. 5

Using a very sharp knife, cut the baklava into diamonds or squares — cut all the way through to the base. This must be done before baking, as the pastry will shatter if cut after.

  6. 6

Bake for 40–45 minutes until the top is deep golden and the layers are crisp throughout. Remove from the oven immediately.

  7. 7

Pour the cold syrup evenly over the hot baklava — the sizzle is deeply satisfying. Leave to absorb at room temperature for at least 4 hours before serving. The baklava keeps at room temperature for up to a week and improves with time.
