Roasted Tomato Bruschetta

Slow-roasted cherry tomatoes concentrate into jammy, intensely flavoured jewels piled onto crisp garlic-rubbed toasted bread — a step above the classic.

Ingredients

  • 500 g (1 lb) cherry tomatoes, halved
  • 4 cloves garlic (2 whole, 2 minced)
  • 4 tbsp extra virgin olive oil
  • 1 tsp balsamic vinegar

Instructions

  1. 1

Preheat oven to 200°C (400°F). Toss the cherry tomatoes with the minced garlic, 2 tbsp olive oil, balsamic vinegar, sugar, and oregano on a baking sheet. Season with salt and pepper.

  2. 2

Roast for 20–25 minutes until the tomatoes are collapsed, jammy, and beginning to caramelise at the edges. Set aside to cool slightly.

  3. 3

Meanwhile, brush the bread slices with the remaining olive oil. Toast on a grill pan or under the grill (broiler) for 2–3 minutes per side until golden and crisp.

  4. 4

Immediately rub each toasted slice with the cut side of the whole garlic cloves.

  5. 5

Spoon the roasted tomatoes and all their juices generously over the toasted bread.

  6. 6

Tear the fresh basil over the top. Finish with a pinch of flaky sea salt and a drizzle of olive oil. Serve immediately.
