Instructions

  1. 1

Preheat the oven to 220°C (425°F). Generously butter four 175 ml (6 oz) ramekins and dust with cocoa powder, tapping out the excess. Place on a baking tray.

  2. 2

Melt the chocolate and butter together in a heatproof bowl set over a pot of barely simmering water, stirring until smooth. Remove from heat and let cool for 5 minutes.

  3. 3

In a separate bowl, whisk the eggs, egg yolks, and sugar together vigorously for 2 minutes until the mixture is pale and slightly thickened.

  4. 4

Fold the chocolate mixture into the egg mixture until just combined. Sift in the flour and salt and fold gently until no streaks remain.

  5. 5

Divide the batter evenly among the prepared ramekins. (At this point they can be refrigerated for up to 24 hours — add 1–2 minutes to the bake time if going straight from the fridge.)

  6. 6

Bake for exactly 12 minutes. The edges will be set and the centre will still wobble when you shake the tray. Run a knife around the edge of each ramekin, invert onto a warm plate, and serve immediately with ice cream.
