15 min4 servings

Ingredients

  • 8 thick slices sourdough or ciabatta
  • 500 g (1 lb) ripe mixed tomatoes, roughly chopped
  • 2 cloves garlic, 1 halved for rubbing + 1 minced
  • 1 small shallot, finely diced
  • 4 tbsp extra virgin olive oil, plus more to drizzle
  • 1 tbsp red wine vinegar
  • Large handful fresh basil leaves, torn
  • Flaky sea salt and black pepper
Bruschetta al Pomodoro

Instructions

  1. 1

Combine the chopped tomatoes, minced garlic, shallot, 2 tbsp olive oil, and red wine vinegar in a bowl. Season generously with flaky salt and pepper. Toss and set aside for 10 minutes to macerate.

  2. 2

Grill or toast the bread slices until deeply golden and charred at the edges — a grill pan or barbecue gives the best flavour.

  3. 3

While still hot, rub each slice vigorously with the cut side of the halved garlic clove. The rough surface of the toast acts like a grater.

  4. 4

Drizzle the toasts with the remaining olive oil.

  5. 5

Drain any excess liquid from the tomatoes. Fold in the torn basil.

  6. 6

Pile the tomato mixture generously onto each toast. Finish with a drizzle of your best olive oil and a pinch of flaky salt. Serve immediately.
