Greek Moussaka

The great baked dish of Greece — layers of roasted eggplant, spiced lamb and tomato ragù, and a thick, golden béchamel, baked until bubbling and set into a sliceable, deeply satisfying casserole.

2 hr8 servings

Ingredients

  • 3 large eggplants, sliced 1 cm thick
  • For the meat sauce: 700 g ground lamb, 1 large onion (diced), 4 cloves garlic (minced), 400 g canned tomatoes, 150 ml red wine, 2 tbsp tomato paste, 1 tsp ground cinnamon, ½ tsp ground allspice, ½ tsp ground nutmeg, 2 bay leaves, salt and pepper
  • For the béchamel: 80 g unsalted butter, 80 g plain flour, 800 ml whole milk (warm), 2 egg yolks, 80 g Kefalotyri or Parmesan (grated), pinch of nutmeg, salt and white pepper
  • Olive oil, for brushing

Instructions

  1. 1

Salt the eggplant slices generously and leave in a colander for 30 minutes to draw out moisture. Rinse and pat completely dry. Brush with olive oil and roast at 200°C (400°F) for 20–25 minutes until golden and tender. Set aside.

  2. 2

Make the meat sauce: brown the lamb in a large pan over high heat, breaking it up. Drain excess fat. Add the onion and cook for 5 minutes. Add the garlic, cinnamon, allspice, and nutmeg and cook for 1 minute. Add the tomato paste, wine, and tomatoes. Simmer for 25–30 minutes until thick. Season and cool.

  3. 3

Make the béchamel: melt the butter in a saucepan over medium heat. Add the flour and cook, stirring, for 2 minutes. Gradually whisk in the warm milk, adding it slowly to prevent lumps. Cook, stirring constantly, for 8–10 minutes until thick and smooth. Remove from heat, cool slightly, then whisk in the egg yolks, cheese, and nutmeg. Season.

  4. 4

Preheat the oven to 180°C (350°F). Lightly oil a deep 23 × 33 cm baking dish.

  5. 5

Layer half the eggplant slices in the base, overlapping slightly. Spread all the meat sauce evenly on top. Layer the remaining eggplant over the meat.

  6. 6

Pour the béchamel over the top and spread to the edges. Smooth the surface with a spatula. Sprinkle with a little extra cheese.

  7. 7

Bake for 45–50 minutes until the top is deep golden and the moussaka is bubbling at the edges. Rest for at least 20 minutes before cutting — this is essential for clean slices. Moussaka is even better the next day, reheated.
