Spanish Tortilla

A thick, golden potato and egg omelette — Spain's most beloved tapa, equally good warm or at room temperature.

Ingredients

  • 6 large eggs
  • 600 g (1.3 lbs) waxy potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 200 ml (¾ cup) olive oil
  • 1 tsp fine salt
  • Fresh flat-leaf parsley and aioli, to serve
Spanish Tortilla

Instructions

  1. 1

Heat the olive oil in a 24 cm non-stick skillet over medium-low heat. Add the potatoes and onion with the salt. Cook gently, turning occasionally, for 20–25 minutes until the potatoes are completely tender but not browned. This slow confit is the key to a creamy tortilla.

  2. 2

Drain the potatoes and onion through a sieve set over a bowl, reserving the oil. Allow to cool for 5 minutes.

  3. 3

Beat the eggs in a large bowl. Add the warm potato mixture and fold gently to combine. Season with salt. Rest for 5 minutes.

  4. 4

Heat 2 tbsp of the reserved oil in the skillet over medium heat. Pour in the egg and potato mixture, spreading it evenly. Cook for 4–5 minutes until the edges are set and the base is golden.

  5. 5

Place a large plate over the pan and flip the tortilla onto it in one confident motion. Slide it back into the pan, uncooked side down. Cook for 3–4 minutes more until just set in the centre — it should still have a slight wobble.

  6. 6

Slide onto a serving plate. Rest for 5 minutes before slicing into wedges. Serve with aioli and fresh parsley.
