Instructions

  1. 1

Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper.

  2. 2

Unroll the puff pastry on a lightly floured surface. Place the brie wheel in the centre.

  3. 3

Drizzle the honey over the top of the brie. Scatter the toasted walnuts and thyme leaves over the honey.

  4. 4

Fold the pastry up and over the brie, pleating and pressing to enclose it completely. Trim any excess pastry and press the seams firmly to seal. Flip the parcel over so the seam is underneath.

  5. 5

Brush the entire surface generously with beaten egg. Score a light pattern on top with a sharp knife if desired — a crosshatch or leaf design looks beautiful. Sprinkle with flaky sea salt.

  6. 6

Bake for 20–25 minutes until the pastry is a deep, even golden brown. The brie inside will be completely melted.

  7. 7

Rest for 5 minutes before serving — the molten cheese needs a moment to settle. Place on a board surrounded by baguette slices, crackers, grapes, and apple. Cut open at the table and drizzle with extra honey. Serve immediately.
