Ingredients

  • 400 ml full-fat coconut milk
  • 300 ml double cream
  • 60 g caster sugar
  • 1 tsp vanilla extract
  • 2½ tsp powdered gelatine (or 3 gelatine leaves)
  • 3 tbsp cold water (for blooming gelatine)
  • To serve: 4–6 fresh passion fruits (pulp scooped out), toasted coconut flakes, fresh mint

Instructions

  1. 1

Sprinkle the powdered gelatine over the cold water in a small bowl. Leave to bloom for 5 minutes — it will swell and become spongy.

  2. 2

Combine the coconut milk, double cream, and sugar in a saucepan over medium heat. Stir until the sugar dissolves. Heat until steaming but do not boil — tiny bubbles at the edges is perfect.

  3. 3

Remove from heat and add the vanilla. Add the bloomed gelatine and whisk until completely dissolved. Strain through a fine sieve.

  4. 4

Lightly oil 6 ramekins or dariole moulds with a neutral oil. Pour the panna cotta mixture evenly between them.

  5. 5

Cool to room temperature, then refrigerate for at least 4 hours, or overnight. The panna cotta should be set but still have a gentle wobble in the centre — like a just-set jelly.

  6. 6

To unmould: run a thin knife around the edge of each panna cotta. Place a plate over the top and invert with a confident flick. If it doesn't release, dip the base briefly in warm water for 10 seconds.

  7. 7

Spoon the passion fruit pulp generously over each panna cotta. Scatter with toasted coconut flakes and a sprig of fresh mint. Serve immediately.
