Classic French Madeleines

Proust's muse — a shell-shaped sponge with a crisp, golden exterior and a tender, lemon-scented crumb, with the characteristic hump that only comes from resting the batter cold before baking.

Instructions

  1. 1

Whisk together the eggs, sugar, lemon zest, and vanilla in a large bowl for 3–4 minutes until pale, thick, and doubled in volume. This aeration is what gives madeleines their light crumb.

  2. 2

Sift the flour, baking powder, and salt over the egg mixture. Fold gently with a spatula until just combined — stop as soon as no dry streaks remain.

  3. 3

Pour the cooled melted butter around the edge of the bowl and fold it in with the same gentle motion. The batter will be smooth and glossy.

  4. 4

Cover the bowl and refrigerate for at least 1 hour, or up to overnight. This cold rest is the secret to the signature hump — the temperature shock when the cold batter hits the hot tin creates the rise.

  5. 5

Preheat the oven to 210°C (410°F). Generously butter a madeleine tin and dust with flour, tapping out the excess. Freeze for 10 minutes.

  6. 6

Fill each mould to three-quarters full with the cold batter. Do not spread it — it will fill the mould as it bakes.

  7. 7

Bake for 10–12 minutes until the edges are deep golden, the hump has formed and set, and a skewer comes out clean. Unmould immediately onto a wire rack. Dust with icing sugar and serve warm — madeleines are at their peak within 20 minutes of baking.
