Cacio e Pepe

Three ingredients, one technique, infinite satisfaction. The Roman pasta that separates the cooks from the chefs.

20 min2 servings

Ingredients

  • 200 g (7 oz) tonnarelli or thick spaghetti
  • 80 g (1 cup) Pecorino Romano, very finely grated
  • 40 g (½ cup) Parmigiano-Reggiano, very finely grated
  • 2 tsp whole black peppercorns, coarsely cracked
  • Fine sea salt, for the pasta water
Cacio e Pepe

Instructions

  1. 1

Toast the cracked peppercorns in a large, dry skillet over medium heat for 1–2 minutes until fragrant. Remove half and set aside for finishing.

  2. 2

Cook the pasta in a smaller amount of water than usual (about 2 litres) with a modest amount of salt — this concentrates the starch in the water, which is essential for the sauce. Cook until 2 minutes shy of al dente.

  3. 3

While the pasta cooks, combine the two cheeses in a bowl. Add 3–4 tbsp of the hot pasta water and stir vigorously into a smooth, creamy paste. It should have the consistency of thick cream.

  4. 4

Add a ladleful (about 60 ml) of pasta water to the skillet with the toasted pepper. Bring to a simmer.

  5. 5

Transfer the pasta directly from the pot to the skillet using tongs. Toss over medium-low heat for 1 minute, adding pasta water a splash at a time, until the pasta is al dente and the water has reduced to a light glaze.

  6. 6

Remove the pan from the heat. Add the cheese paste and toss rapidly, adding tiny splashes of pasta water as needed, until the sauce is glossy and coats every strand without clumping. Serve immediately with the reserved pepper on top.
